1 C long grain white or basmati rice 2 C water 1 t salt 3 T chopped fresh cilantro 3 t vegetable oil 1/2 lime juice In a small, heavy pot, add rice, water, 1 t oil and salt. Boil on high until the water is just at the level of the rice. Reduce heat to low and cook, covered for 15 minutes. Turn off heat and keep covered another 5 minutes. In a bowl, combine rice with remaining ingredients.
