(Chinese roasted pork) https://www.youtube.com/watch?v=VH0X7cDJIqw 3 lb pork butt cut into 3" x 2" slabs Marinade 1 t salt 1/2 t five spice 1 T sugar 1 cube red fermented tofu (chopped fine) + 1 T juice 3-4 cloves garlic 1 T oyster sauce 1 T dry sherry 1 T honey 2 T dark soy sauce 1 t paprika 1 t sesame oil 2 t molasses 2 T warm water 1. Mix marinade ingredients and set 2 tablespoons aside to brush onto meat after cooking. 2. Place meat in large zip top bag with marinade. 3. Marinade in refrigerator for 24 hours. 4. After marinating, save liquid for basting while cooking. 5. Line baking sheet with foil and use a rack to keep meat off bottom. Add 1/2 cup water to tray to keep from burning/smoking. 6. Bake at 500 for 25 minutes near top of oven. 7. Baste with marinade, flip over, and cook at 450 for 25 minutes. 8. After cooking, baste with reserved clean marinade and let rest for 10 minutes. Cut into pieces about 1/3" thick.
